Tiramisù

Tiramisu is a common Italian dessert served at the end of the meal. Tiramisu means “pick me up” or “lift me up” in Italian. It is typically made with ladyfingers dipped in coffee and layered with mascarpone cheese flavored with cocoa. Tiramisu has been adapted many times into different types of pudding, cakes and other desserts.

Makes about 12 servings

Ingredients:
  • 1 package vanilla pudding mix
  • 2 cups skim milk
  • 1 cup mascarpone cheese
  • 2 ¾ cups reduced-fat frozen whipped topping, thawed and divided
  • 1 loaf angel food cake
  • 1 ½ teaspoons instant coffee granules
  • ½ cup hot water
  • ¼ brandy
  • ¼ cup of Kahlua or other coffee-flavor liqueur
  • Cocoa for garnish

Instructions:

Combine pudding mix and milk in a saucepan; bring to a boil over medium heat, stirring constantly.
Remove from heat; pour pudding into a mixing bowl, and cool.
Add mascarpone cheese to pudding; beat at low speed with an electric mixer until smooth.
Fold in 1 ¾ cups whipped topping, and set aside.
Slice angel food cake in half horizontally.
Cut each layer vertically into 16 equal rectangles and set aside.
Dissolve coffee granules in hot water; stir in brandy and Kahlua.
Brush over the tops and bottoms of the cake pieces.
Line bottom and sides of a 3-quart trifle bowl or soufflé dish with half of the cake pieces; cover with halt of pudding mixture.
Repeat with the remaining cake pieces and pudding mixture. Cover and chill for 8 hours.
Afterwards, spread remaining cup of whipped topping over the Tiramisu, and garnish, if desired. Cover and chill.
